Learn to Make Risi e Bisi from a Nonna at Staten Island's Enoteca Maria and EthNYC Eats

In the latest installment of NY Daily News' EthNYC Eats series, Italy native Rosa Turano, one of the Nonna's at Staten Island's Enoteca Maria shares her family recipe for Risi e Bisi, or Risotto and Peas.

The dish, called Risi e Bisi in Italy, is one of Turano’s specialties at Enoteca Maria, a St. George spot that employs about a dozen nonnas (grandmothers) who hail from different areas of the boot-shaped country. The nonnas rotate nights as the featured chef, making meals from their own region when it’s their shift.
