Learn How to Make German Rouladen and Spaetzle in the Latest EthNYC Eats

In the latest installment of NY Daily News’ EthNYC Eats series, 81-year old German immigrant and grandma Margaret Keith, along with two grandchildren, share their family recipe for Rouladen and Spaetzle, a dish made up of rolled up slices of beef layered with whole grain mustard and thick sliced that are secured with a toothpick.

Margaret chose the recipe because she believes it is easy to make and one of the few she remembers from growing up in the German city of Duisburg, saying “It reminds me of our big Sunday dinners with all the family.”
