An average bluefin tuna weighs about 400 pounds, and measures in at 7 feet long, posing a big challenge to a sushi chef trying to break the fish down for use in his or her menu. Watch to see how chef Saito, from New York’s Sushi Ginza Onodera, breaks down an enormous bluefin for omakase service.
