In this episode of The Meat Show, Nick Solares heads to Empellón midtown, where chef Alex Stupak is doing his own take on tacos al pastor. Although this dish is typically prepared with pork, Stupak is using prime chuck sandwiched between layers of dry-aged beef fat which is then roasted on a spit and served on a freshly made tortilla.
