[WATCH] Peek Inside the Crown Finish Caves, Brooklyn's Subterranean Cheese Aging Tunnel

The subterranean Crown Finish Caves in Crown Heights, Brooklyn, is an underground cheese aging facility that utilizes an 1850s-era lagering tunnel thirty feet under Bergen Street. In this short video from Time Out, peek inside the finishing caves and learn how the underground Brooklyn tunnel can tweak the cheese's flavor.

Situated inside old lagering tunnels beneath Bergen Street, Crown Finish Caves is home to some 22,000 units of wash-rind and blue-veined cheeses aged anywhere from three to six months on wood-plank shelves. The temperature-controlled cave from creators Benton Brown and Susan Boyle has transformed three forgotten tunnels into a solar-powered green-roofed compound producing top-notch cheeses.
