During the day, Nolita's Ramen Lab operates as a test kitchen for the Nation's top ramen factory, Sun Noodle. Soux chefs develop new products and recipes under direction of Iron Chef Nakamura. Recently, the ramen lab decided to take advantage of the nightlife surrounding the area and open the doors to the public, serving up some of the best ramen in the City in a small, standing-room only location. Patty Lee from Zagat recently sat down with one of the soux chefs, and had a bowl of the delicious chicken-bone broth ramen.
