Zagat Explores How Gourmet Vegetarian Restaurant Dirt Candy Gets Creative with Cauliflower

Dirt Candy is one of the only Michelin "Bib Gourmand" vegetarian restaurants in America. It has had a ton of press and reviews calling it the best thing since sliced beets, and it's head chef, Amanda Cohen, was the first vegetarian chef to appear on Iron Chef. The New York Times review said:

Eating at Dirt Candy can be like going to a child’s birthday party in a country where all the children love vegetables...Ms. Cohen is not adapting the vegetarian cuisine of some other culture. She is inventing her own.

Patty Lee from Zagat recently sat down with Cohen to see how she integrates the versatility of cauliflower into her dishes, and spices up the otherwise neutral veggie.
