  &lt;p&gt;&lt;a href="https://www.fleishers.com/"&gt;Fleishers Craft Butchery&lt;/a&gt;, a fixture in the national butchery scene, officially opened its Upper East Side shop on Friday August 5th. The shop is a callback to New York&amp;#39;s post-war past, when shops dotted Manhattan and consumers walked in to select their preferred cuts of beef, a time before meat was bought pre-cut at supermarkets.&lt;/p&gt;

&lt;p&gt;At Fleishers, dressed meat (pre-butchered animals) can be viewed through a glass window and employees work on a butcher block just behind display cases, allowing customers to see exactly how their meat is prepared.&lt;/p&gt;

&lt;blockquote&gt;
&lt;p&gt;The 1,000-square-foot Manhattan shop, down the street from a Citarella Gourmet Market, will offer pasture-raised beef, pork and lamb, as well as poultry sourced from farms upstate.&lt;/p&gt;

  &lt;p&gt;Brooklyn-based filmmaker and producer &lt;a href="https://twitter.com/adhikab"&gt;Brinda Adhikari&lt;/a&gt; recently created this fantastic profile video of &lt;a href="http://www.yelp.com/biz/g-esposito-and-sons-brooklyn"&gt;Esposito and Son&amp;#39;s Pork Store&lt;/a&gt; in Carroll Gardens. The family owned business is 93-years old, and is one of the last remaining family run business in the area. Adhikari writes:&lt;/p&gt;

&lt;blockquote&gt;
&lt;p&gt;I&amp;#39;ve lived in Brooklyn for 12 years. And anyone who lives here will either have heard about it, or more likely, will have been inside Esposito&amp;#39;s Pork Store. It&amp;#39;s a true gem of this city. I recently spent a couple of days hanging out with the guys who work there and all the wonderful people this store has been bringing in for nearly 100 years. I learned a lot about what it means to work hard, love what you do and to do what you love. Oh, and I ate some pretty amazing prosciutto balls.&lt;/p&gt;
